A Conversation Between A Doctor And A Chef

        Nick Iula is an award-winning Chef, with over 45 years in the Food and Beverage Industry.  Born in Boston’s historic North End, surrounded by fresh produce stands, his earliest cooking lessons were from his Italian mother. During high school he worked part time in restaurants and in hospitals, and as a hobby, conducted science projects. 

       

        He attended Williams College as a pre-med student, with a part time job cooking. His job and a semester abroad in Italy rekindled his childhood fun with cooking; he transferred to Johnson and Wales Culinary School in Providence RI.  Nick spent the early part of his career cooking in restaurants, hotels, country clubs, and prestigious city clubs, honing his international cooking skills working alongside chefs from other countries.

         

           For more than 3 decades Nick worked for Compass Group North America, as the Director of Dining Services at universities, including Harvard Law School, Northeastern University, University of Florida, University of Houston, and Shippensburg University.  

           Nick joined Healthy Eating Adventure when it was held at Shippensburg University; as dining service director he coordinated the kick off evenings.  When Nick took on wholefood plant based eating, he experienced its benefits with reversal of his fatty liver, hypertension, pre-diabetes, gout and obesity, all common among chefs.  Nick’s love of science was reawakened as he experienced these health changes. 

         Nick added whole food plant-based choices to the university dining options; for this he won the PETA award as a top ten University for their plant-based menus. He has enjoyed redoing many popular dishes into fabulous plant based recipes.   He now helps coordinate Healthy Eating Adventures and enjoys teaching “creative cooking” to Adventure participants and to other organizations.

          His professional passion for healthy food encompasses environmental concerns and social advocacy. Nick lives in rural south-central Pennsylvania, with his beautiful artist wife, Roberta.
