I love to top a slice of this pumpkin pie with a dab of soy ice cream! It's wonderful to have a dessert that is actually nutritious and low fat:))
Ingredients for Crust:
8 sheets of graham crackers
1 cup pecans
1 tsp Cinnamon
1/2 tsp nutmeg
1 small apple cut up - don't peel
4 figs
Instructions for Crust: In a food processor mix the graham crackers and pecans. Add the seasoning and mix again. Then add the apple and figs and mix well. My 10 year old grand son & I do taste testing at this point to see if more cinnamon or nutmeg is needed! Press the mixture into pie plate and chill while you make the filling.
Preheat oven to 325*
Ingredients for Yummy Filling:
16 oz can of 100% pumpkin (or use your own pumpkin puree )
16 oz silken tofu
1/3 cup of honey
1 tsp vanilla
1 tsp cinnamon
1 tsp pumpkin pie spice
1/2 tsp ginger
1/4 tsp ground clove
Put all ingredients in the food processor and mix them well until smooth. Taste test and add spices to suit your palate. Pour into pie crust and bake for 45 - 60 minutes. Chill for at least 2 hours before serving.
