Okra – Roasted
8 medium okra pods
1 tablespoon balsamic vinegar
1/2 teaspoon garlic powder

Try roasting okra, the smaller the pods the more tender and less stringy. Our toaster oven is perfect for roasting small quantities of vegetables, efficient and quick.
Serves: 2 || Prep Time: 5 minutes || Cook Time: 15 minutes
Preheat 400°F toaster oven (can be roasted in regular oven too). Cut the tips off of each okra pod. Cut pods into 1-2 inch slices. Place okra slices in a medium sized bowl; add 1 tablespoon balsamic vinegar, stir to coat. Line the baking pan with parchment paper; place okra slices on the paper. Sprinkle garlic powder on slices. Place in toaster oven and roast for 10 minutes, turn, roast another 5 minutes.
